01 / ABOUT THE PLACE

About this place

Along a quiet street in Kagurazaka, 波濤 serves an omakase that brings together the delicate techniques of Japanese cuisine and Edo-style nigiri. The meal begins with a clear dashi soup and seasonal small plates full of savoury depth, then moves on to composed nigiri.

The small plates that open the course are shaped by thoughtful touches that bring each ingredient’s character to the fore. Seasonal flavours follow one another at the table: conger pike praised for its fragrant browning and tender texture, rich clam dashi, and a dish pairing karasumi (dried mullet roe) with ikura (salmon roe). The plates also have the depth of dishes made to accompany sake, and the range of sake on offer invites a leisurely drink alongside them.

The nigiri that follows pairs toppings full of flavour with rice whose grains remain distinct and whose vinegar gives it a clean finish. Each piece shows careful preparation, from marinated lean tuna and meltingly soft medium-fatty tuna to kohada (gizzard shad) cured to just the right balance and shellfish with a pleasing bite. The rhythm carries the meal towards its climax, with the aroma of seaweed toasted just before serving and a temperature that lets each bite gently come apart in the mouth.

After the nigiri, comforting nyumen—warm noodles served in broth—and desserts such as homemade ice cream bring the meal to a thoughtful close. At the calm, wood-focused counter, diners can watch the chefs’ lively movements up close. Seating is by reservation only, so it is worth planning ahead for a dinner on a special occasion.
